| Titel (englisch): | Collaborative project: Metabolic analysis and innovative AI-based process control for the resource-efficient bio-production of novel food products (MiKI) - Subproject B |
| Akronym: | MIKI |
| Beschreibung (engl.): | Novel foods are becoming increasingly important due to the many challenges facing agriculture (climate change, resource scarcity, pollution, geopolitical factors) and changing consumer demands (carbon footprint, vegan diets). Novel foods include so far unused animal and plant species, products from bioreactors produced using, for example, microorganisms, fungi or plant cells, but also innovative processing methods. The production of novel foods using biotechnological methods enables resource-saving and sustainable food production, but is technically complex and cost-intensive. The aim of the MiKI project is to develop innovative control technology to improve bioreactor-based processes. The challenges are the control of numerous parameters (e.g. nutrients, pH, temperature, aeration) and the variable composition of the starting materials for the processes (e.g. substrates from residual streams). The project will use a combination of Ion mobility spectroscopy with gas chromatographic pre-separation (GC-IMS) and AI-supported analysis will be used to gain model-independent insights into the production processes. Statistical experimental design will be used to derive control parameters and optimise processes in terms of cost and yield. The method will be tested in three example processes with different organisms (yeast, fungi, plant cells) for the production of functional proteins, biomass and secondary plant metabolites. An interdisciplinary consortium of academia and industry is driving the development to establish innovative production processes for sustainable novel foods. |
