Beschreibung (dt.): Sojasaucen werden im asiatischen Raum traditionell durch eine mehrstufige Fermentation von Weizen und Sojabohnen hergestellt. Durch eine von Schimmelpilzen dominierte enzymatische Hydrolyse der Sojaproteine und Weizenstärke entsteht das Zwischenprodukt Koji. Die entstehenden Peptide, Aminosäuren und Zucker werden in der darauffolgenden Moromi Fermentation hauptsächlich von Hefen und Milchsäurebakterien zu Metaboliten verstoffwechselt, die die Sensorik dieser Saucen bestimmen. Aufgrund ihres landeskulturellen Wertes für den regionalen Anbau in Deutschland und ihrer Inhaltsstoffe eignet sich die Lupine als alternativer Rohstoff für glutenfreie Würzsaucen. Gleichwohl gibt es derzeit keine lupinenbasierten Würzsaucen auf dem Markt. Ziel dieses Vorhabens ist die Entwicklung salzreduzierter, sensorisch attraktiver, gluten- und gentechnikfreier Würzsaucen auf der Basis regionaler, biologisch erzeugter Lupinensamen.
Beschreibung (engl.): Soy-sauces are traditionally produced in Asis by a several steps fermentation of wheat and soy beans. The enzymatic hydrolysis of soy proteins and wheat starch is dominated by fungi resulting in the intermediate product Koji. The resulting peptides, amino acids and sugars are metabolized in the subsequent moromi fermentation by yeasts and lactoc acid bacteria to metabolites, whic determine the sensory quality of these sauces. Based on their region-specific value for the regional productionin Germany and because of their components, lupine is a alternative raw material for gluten free flavoring sauces. At the same time, there are no such lupin-based sauces on the market. The aim of this project is the development of salt-reduced, sensorically attractive, gluten- and gene-modification free flavoring sauces based on regional, organic lupin seeds. Milestones and respective contributions of the research partners (FS) are (1) standardization of lupin-koji production established at FS1 as a basis for the moromi fermentation (FS1,2), (2) characterization of microbial consortia in spontanous moromi fermentations and isolation of safe, dominant strains (FS1,2), (3) control of the presence of non-cultivated microbiota of selected moromi fermentations (FS2). (4) identification of sensorically active and rheologically relevant key metabolites of the moromi microbiota (FS2), (5) influence of the salt concentration and temperature on the interaction of yeasts and bacteria in the moromi fermentation and their aroma- and structure-forming abilities, (6) comparison of spontaneous, process-induced and inoculated moromi fermentations (FS2), (7) upscaling and product design for two lupin sauces with different rheology and sensorcs (FS 1,2), and assessment of ressource use and economic impact of the total approach (FS1).
