Beschreibung (dt.): Das Ziel des beantragten Projektes Safe-Pack ist es, neue antimikrobielle Verpackungslösungen für den Selbstbedienungsbereich zu entwickeln, die eine Verbesserung der Qualität, Haltbarkeit und Sicherheit von Fleisch und Fleischerzeugnissen bewirken. Hierzu werden intrinsisch wirkende (SAM) Polymere zur Verwendung als Beschichtung von Siegelschalen, Saugvlieseinlagen und Folien für den Fleischsektor weiterentwickelt und systematisch charakterisiert. Das Projekt ist in 5 Arbeitspakete (AP) gegliedert: Im AP1 erfolgt die Weiterentwicklung und Anpassung der SAM Polymere für das jeweilige Anwendungsgebiet. Dies beinhaltet verfahrenstechnische Aspekte bei der Polymersynthese und -aufreinigung, die chemisch-analytische und mechanisch-dynamische Charakterisierung, die Maßstabsvergrößerung zur Bereitstellung von Mustermengen sowie die Untersuchung auf mögliche Degradationsprodukte bei der Polymerverarbeitung. Die in AP1 erstellten Materialien werden kontinuierlich in Bezug auf ihre antimikrobielle Aktivität in Abhängigkeit von produkt-, prozess- und umweltspezifischen Parametern getestet (AP2). Gegenstand des AP3 sind die Technikumsversuche, in denen die Prozessparameter erforscht werden und die Polymere für die Pilotstudien produziert werden. Zudem erfolgt die Durchführung der Pilotstudien in der Fleischindustrie. AP4 beinhaltet die Wirtschaftlichkeitsprüfung der Materialien durch Erstellung einer Kosten-Nutzen Analyse. AP5 umfasst das Projektmanagement.
Beschreibung (engl.): The aim of this project Safe Pack is to develop new antimicrobial packaging solutions for the self-service area, designed to improve the quality, shelf-life and safety of meat and meat products. For this purpose, sustainable active microbicidal (SAM) polymers will be further developed for the application as packaging materials in the meat sector (trays, absorbent inserts and packaging films) and characterized systematically. The project is divided into 5 work packages (WP): In WP1 the development and adaptation of SAM polymers for each field of application will take place. This includes procedural aspects of the polymer synthesis and purification, the chemical analysis and the dynamic mechanical characterization, the scale up for the provision of sample volumes and the investigation of possible degradation products during and after polymer processing. The packaging components produced in WP 1 will be continuously tested for their antimicrobial activities depend on product, process and environmental parameters (WP2). In WP3 pilot plant experiments will be conducted to explore the process parameters and to produce the packaging materials for the pilot studies. Furthermore, the pilot studies in the meat industry will be performed. In WP4 the economic efficiency of the materials will be measured by creating a cost-benefit analysis. WP5 covers the project management.
Ergebnis (dt.): Im Safe-Pack-Projekt wurden neue intrinsisch antimikrobielle Polymere auf Basis von tert. Butylaminomethylstyrol (TBAMS) zum Einsatz in Verpackungsfolien, Siegelschalen und Saugvlies-einlagen weiterentwickelt. Das Scale-up der Monomer-Synthese wurde erfolgreich umgesetzt, das Polymerisationsverfahren optimiert und ein Aufreinigungsverfahren erarbeitet sowie mit der Compoundierung von Standardpolymeren ein neuer vielversprechender Lösungsansatz entwickelt. Bereits geringe Zusätze von 10 – 15 % Poly(TBAMS) im Compound führen zur Ausbildung eines ausgezeichneten antimikrobiellen Wirkungsprofils. Diese Mengen beeinflussen dabei kaum die Werkstoff- und Verarbeitungseigenschaften der technischen Polymere. Eine erfolgreiche Compoun-dierung des TBAMS-Homopolymers sowie entsprechender Copolymere lässt sich mit einem breiten Spektrum an technischen Polymeren (PE, PS, ABS, TPU) realisieren. In Produktionsversuchen bei den Partnern zeigte sich, dass die Compound-Verarbeitung zu Mehrschichtfolien für die Herstellung von Verpackungen im Produktionsmaßstab möglich ist. Die kommerzielle Verwertung der Projekt-ergebnisse wird davon abhängen, wie die Zulassungsregularien gemäß Biozid-Richtlinie für diese neue Materialklasse ausfallen werden. Im Projekt konnten das Know-how der Forschungsgruppe sowie das Netzwerk insbesondere durch den intensiven Austausch im interdisziplinären Konsortium deutlich erweitert werden. Die Projektergebnisse wurden / werden in internationalen Journals publiziert.
Ergebnis (engl.): "The aim of the project Safe-Pack was to develop novel antimicrobial packaging solutions to
increase the quality, shelf life and safety of meat and meat products and to reduce losses.
Therefore, intrinsically antimicrobial (SAM®) polymers were further developed for use in
plastic trays, absorbent pads and foils in the meat industry.
A detailed characterization of the new materials regarding their antimicrobial effect showed
that even the addition of 10% poly(TBAMS) was enough to achieve an excellent antimicrobial
effectiveness against a broad spectrum of spoilage and pathogenic bacteria. Even if specific
product factors influenced the activity, the activity can be improved by a higher concentration
of the polymer as well as by an enlargement of the contact surface.
The developed concept for the assessment of the costs and benefits of the implementation of
new packaging solutions as well as their impact on a sustainable food production is
transferable to other antimicrobial packaging solutions.
The same applies to the standardized evaluation scheme, which allows assessment of the
application of antimicrobial packaging solutions for different areas.
Based on the collected experiences, the know-how of the working group and the network
could be enhanced significantly. For this, the intensive exchange of the interdisciplinary
consortium delivers a large contribution. The results are/were published in international
journals."
